Vegan Veggies in Penne Pasta

A 15 Minute Veggie pasta and it is vegan. I am not kidding! Here is to #LazyCookingWithFTG. It takes exactly 15 minutes. Ready.. start the timer...0:00

1. Boil 3 cups of water with salt and two tsp of olive oil (2 mins)

Veggies

1.1. While it is boiling, take a quarter of a medium onion.

Cut it into 1 inch squares (15 sec)

1.2. Cut a floret of broccoli into edible size (15 sec)

1.3. French cut 2 green beans into 1 inch length (15 secs)

1.4. Julienne a small carrot into 1 inch length (20 secs)

1.5. Cut 2 mushrooms into quarters (10 secs)

1.6. Cut half a medium tomato into 9 pieces (15 secs)

1.7. Mince garlic (15 secs)

1.8. Fine chop basil (15 secs)

2. Put 1 cup of Penne Pasta into the boiling water. Cook it for exactly 10 minutes. The pasta should not be over cooked.​​

2.1 While the pasta is cooking,

2.2 Heat olive oil in a pan and sprinkle red chili flakes

2.3 Add the veggies except tomatoes.

2.4 Sauté it for 2 minutes.

2.5 Bring it to low heat.

2.6. Wait...

2.7 Switch on a nice music and relax!

2.8. You have been on a roll for the last 4 minutes

2.9. 9th minute nearing. Add tomatoes to the veggies

2.10. 10th Minute - Drain the pasta from excess water.

3. Toss the pasta into sautéd veggies. Bring the heat to high. Mix it up. (2 mins)

4. Transfer the pasta to your plate and dribble a dash of olive oil on top (1 min)

5. Time is up! 15 minutes your VViPP is done!

Highly recommended: Pair it with Cabernet Sauvignon. Happy Eating!
